My kids LOVE homemade mac n cheese (who doesn't?) so I was looking for a passover version. I was able to adapt this recipe to make a version that got rave reviews from them. I omitted the sugar and cinnamon and added cojack cheese shreds to the egg & cheese mixture, and saved some for the top as well. It was a little 'soupy' so I might consider adding less milk next time. I might also consider substituting sour cream for the milk. It might have absorbed more if we had let it set, too, but it looked so good we couldn't wait!
