INGREDIENTS













  • 6 matzos










  • 5 eggs










  • 1 cup milk










  • 16 oz cottage cheese










  • 1 tsp salt










  • ΒΌ cup sugar










  • 1 tsp cinnamon










  • 3 Tbsp melted butter










  1. Beat eggs with milk, then add cottage cheese, salt, sugar, cinnamon and melted butter



  2. In a greased 1 1/2 quart baking dish, arrange 3 matzos that have been broken into large pieces



  3. Pour half of the cheese mixture over the matzo



  4. Repeat with the balance of the broken matzos and cheese mixture



  5. Bake in 350 degree oven for 40 minutes



  6. Serve with sour cream

My kids LOVE homemade mac n cheese (who doesn't?) so I was looking for a passover version. I was able to adapt this recipe to make a version that got rave reviews from them. I omitted the sugar and cinnamon and added cojack cheese shreds to the egg & cheese mixture, and saved some for the top as well. It was a little 'soupy' so I might consider adding less milk next time. I might also consider substituting sour cream for the milk. It might have absorbed more if we had let it set, too, but it looked so good we couldn't wait!
