This is an easy, not too sweet dessert for Passover.

INGREDIENTS













  • 6 eggs










  • 2 cup sugar










  • 1 cup oil










  • 2 cup cake meal










  • 1 cup potato starch










  • 1½ cup nuts










  • 1 pinch salt










  • ½ cup cinnamon/sugar mixture










  • 1 lemon puree










  1. Beat eggs well



  2. Add sugar and oil slowly, beating between additions



  3. Add cake meal, potato starch, nuts, salt and lemon with rind (puree lemon and rind in food processor)



  4. Mix and refrigerate for several hours



  5. Moisten hands and roll dough into long strips that are about 2" in diameter



  6. Bake on a greased cookie sheet at 350 degrees for 25 minutes



  7. Remove from oven and let cool slightly. Then cut into slices and roll in cinnamon/sugar mixture
