A great side dish or an entree for vegetarians
3 Onions chopped
1 lb mushrooms coarsly chopped
4 Tbsp Vegetable oil
8 carrots grated
4 10 oz.pkg. frozen chopped spinach defrosted and squeezed dry
8 eggs lightly beaten
1 tsp salt
1 tsp parve chicken flavored boullion
½ tsp black pepper
1 cup matzoh meal
Saute mushrooms and onion in oil.
Beat eggs, add all ingredients, mixing after each addition.
Pour into greased 11x13 baking dish or muffin tins.
Bake 45 minutes at 350 F.
