A great pancake recipe from pesach. Even the kids love them!
2 eggs, seperated
Â½ tsp salt
2 Tbsp honey
Â¾ cup milk or water
â…” cup matzoh meal
Beat egg yolks.
Mix in salt, honey, matzoh meal.
Let mixture stand to thicken, beat egg whites. White should be stiff not dry.
Fold whites into batter and fry in hot fat or on a greased griddle. When pancakes begin to bubble and brown on one side, turn over to cook on the other side.
Serve with sugar, or fruit preserves.
