INGREDIENTS













  • 6 large potatoes










  • 3 large zucchini










  • 1 xlarge carrot










  • 1 onion










  • 5 eggs










  • ¾ cup oil










  • 1 Tbsp salt










  • 1 tsp pepper










  • ¼ cup potato starch










  1. grate all vegetables and drain well.



  2. beat eggs with a fork



  3. combine all ingredients



  4. bake in a 9x13 on 350 for 1 1/2 hours.

I made this last week and it tastes more like a zucchini kugel than vegetable kugel. I even added more carrots and potatoes than called for but even so, it had a predominant squash taste. If you don't like that, I'd suggest using less squash and more carrots.
