This is adapted from a recipe of a friend who makes desserts for a well known hotel. In Ukraine we do not have strawberries now, so I make it with kiwis. (If using kiwis, do NOT overprocess, smashing the seeds.) It is easy and delicious! This year I shared this hitherto private recipe in the hopes that people will enjoy it, and help us make Pesach possible for Jews in Crimea.Tax deductible, secure donations may be made at https://chabadcrimea.org

INGREDIENTS

  • 2 cup pureed strawberries (about a pint fresh)

  • 1.75 cup sugar

  • 2 Tbsp freshly squeezed lemon juice

  • 1 egg white

  1. Puree strawberries (or raspberries, peaches, kiwis, apricots) with 1 3/4 c sugar and 2 Tbsp lemon juice in blender or food processor.

  2. Freeze overnight or till almost frozen solid. Remove from freezer. If it becomes too hard, just wait till it softens a little.

  3. Beat mixture in mixer together with 1 egg white till it puffs up and is thick and light colored.

  4. Refreeze.

  5. Serving suggestions: Plain, or on pears poached in wine and sugar, or on a meringue circle, or in an ice cream cake.
