
This is adapted from a recipe of a friend who makes desserts for a well known hotel. In Ukraine we do not have strawberries now, so I make it with kiwis. (If using kiwis, do NOT overprocess, smashing the seeds.) It is easy and delicious! INGREDIENTS
2 cup pureed strawberries (about a pint fresh)
1.75 cup sugar
2 Tbsp freshly squeezed lemon juice
1 egg white
Puree strawberries (or raspberries, peaches, kiwis, apricots) with 1 3/4 c sugar and 2 Tbsp lemon juice in blender or food processor.
Freeze overnight or till almost frozen solid. Remove from freezer. If it becomes too hard, just wait till it softens a little.
Beat mixture in mixer together with 1 egg white till it puffs up and is thick and light colored.
Refreeze.
Serving suggestions: Plain, or on pears poached in wine and sugar, or on a meringue circle, or in an ice cream cake.
