This delicious egg salad makes a wonderful substitute for gefilte fish when you're looking to change up your menu. The horseradish isn't very spicy in this large recipe; it adds just the right amount of tang.
12 hard cooked eggs, chopped
6 ribs celery, chopped
5 scallions, sliced
6-12 oz smoked salmon, in 1-inch pieces
3 Tbsp prepared white horseradish, drained
1 cup mayonnaise
0 salt and pepper to taste
1 Tbsp dried parsley, optional
Gently stir together eggs, celery, scallions, and smoked salmon in a bowl to combine.
Separately, in a small bowl, mix together the mayonnaise and horseradish. Fold into the egg salad. Add salt and pepper to taste. If desired, carefully stir in the parsley to add a little more color.
