This is prepared on top of the stove making it ideal for the Seder nights. More elegant than the usual boiled chicken for those who don't use meat at the Seder meal.
1 (4 lb) chicken or turkey rolled roast in a net
2 onion, chopped
6 cloves garlic, minced
0 pinch salt, pepper, paprika, to taste
Saute the onion in a bit of oil till transluscent. Push to the side of pan.
DO NOT REMOVE NET FROM ROAST. Smear roast with garlic and spices. Lightly brown roast on all sides. (The browning step is optional, but adds flavor) Place roast on top of onions and add water almost to cover. Cook 2.5 hours.
Remove roast from gravy and let cool overnight. Cut off the net and Slice while cold. May be frozen.
