Tangy side dish or main dish for vegetarians. Yummy with quinoa.
6 large portobello mushrooms, sliced
2 peppers slicedorange, 1 red
½ cup olive oil
½ cup lemon juice
3 crushed garlic cloves
1 salt and pepper to taste
Put sliced veggies into a ziploc bag with the marinade ingredients. Let sit for min 4 hrs.
Remove from marinade and roast for 20 minutes or until tender.
Serve warm or at room temp.
