INGREDIENTS













  • - CRUST:










  • ⅔ cup cake meal










  • ⅔ cup ground nuts (I use walnut)










  • ⅔ cup potato starch










  • ⅔ cup safflower oil (or other mild flavored oil)










  • ½ cup sugar










  • - TOPPING:










  • 1 cup sugar










  • 2 eggs










  • 2 Tbsp lemon juice










  • ½ tsp baking powder










  • ¼ tsp salt










  • 1 confectioners sugar










  1. Mix all crust ingredients together by hand and pat into an 8 X 8 square pan. Bake at 375 for 15 minutes.



  2. While crust is baking, combine all topping ingredients, aside from the confectioners' sugar. Mix until frothy. Pour over baked crust.



  3. Bake 18-22 minutes or until lightly brown. When cooled, dust with confectioners sugar.
