These lemon bars are so awesome, you won't believe they're pesadich!
⅔ cup cake meal
⅔ cup ground nuts (I use walnut)
⅔ cup potato starch
⅔ cup safflower oil (or other mild flavored oil)
½ cup sugar
1 cup sugar
2 Tbsp lemon juice
½ tsp baking powder
¼ tsp salt
1 confectioners sugar
Mix all crust ingredients together by hand and pat into an 8 X 8 square pan. Bake at 375 for 15 minutes.
While crust is baking, combine all topping ingredients, aside from the confectioners' sugar. Mix until frothy. Pour over baked crust.
Bake 18-22 minutes or until lightly brown. When cooled, dust with confectioners sugar.
