Every Passover, my family and I will make a big bowl of this filling, a big plate of matzah tortillas, put it all on the table, and let everyone assemble their own rolls. You could put hot sauce, sour cream, yogurt, or even some apple cider vinegar out on the table, too. And even though these rolls look like they have birdfood in them (because of the various seeds), they are delicious, and leave you feeling healthy and satisfied when you're done.

INGREDIENTS













  • 0 Matzah Tortillas










  • 3 cup Cooked Brown Rice










  • ¼ cup Millet Seeds










  • ¼ Untoasted Sunflower Seeds










  • ¼ cup Flax Meal










  • 1 cup Thinly Sliced Collard Greens










  • 1 cup Coarsely Shredded Carrots










  • ½ cup Plain or Dill Goat Cheese










  • ¼-½ cup Extra Virgin Olive Oil










  • 0 Garlic Powder to taste










  • 0 Onion Powder to taste










  • 0 Salt & Pepper to taste










  • 0 Hot Sauce for serving










  1. Mix together the rice, millet, sunflower seeds, flax meal, greens, carrots, and goat cheese until evenly mixed.



  2. In a small bowl, whisk the olive oil, garlic powder, onion powder, salt, and pepper until well blended. Pour over the rice mixture, and mix everything together very thoroughly.



  3. Heat the Matzah in the microwave until hot.



  4. Let everyone assemble their own rolls at the table, and add hot sauce as wanted. Serve hot. Enjoy!
