
Guess what? You can eat pizza during passover! This is like a quick version of pizza, but without the leavening. This can be eaten as the main meal, or it can be cut into wedges and served as an appetizer. Either way, it is still delicious!

INGREDIENTS
2 Matzah Tortillas
3 Tbsp Tomato Jam
¼ cup Shredded Extra Sharp Cheddar Cheese
¼ cup Shredded Swiss Cheese
2-4 Tbsp Fresh Parsley, chopped
½ tsp Red Pepper Flakes (optional)
0 Salt & Pepper to taste
Preheat a saute pan on medium.
Spread the tomato jam on one side of a tortilla, and sprinkle the cheese, parsley, red pepper flakes, and salt and pepper on top.
Place the other tortilla on top of the first one with the ingredients in the middle.
Place the quesadilla in the preheated pan, and cook until the cheese is melted.
Serve hot. Enjoy!
