
If you think you can't eat bread during Passover, think again! These are kind of like denser unsweetened crepes, but WAY better than those cardboard matzah-cracker "things" you buy at the store. You can make peanut butter "sanwiches", quesadillas, salad wraps, and you can even fold them into quarters and make toast with them! How cool is that?

INGREDIENTS
1 cup Matzah Meal or Whole Wheat Flour
½ tsp Salt
1 Tbsp Extra Virgin Olive Oil
1 Egg
1 cup Water
Put all the ingredients into a small mixing bowl and beat until mixed. Let rest for 5 minutes to thicken.
Meanwhile, heat a nonstick griddle to 350 degrees.
When batter is done resting, use a 2/3 cup measure to scoop the batter onto the griddle. Use one scoop for each tortilla, and use the bottom of the measuring cup to spread the batter into an even circle.
Cook for one minute, flip, cook for another minute, and place on a plate to cool. Enjoy!
