INGREDIENTS













  • 1 lb hamburger or soy crumbles










  • 1 clove garlic, minced










  • 1 onion, diced small










  • 1 (14 oz) diced tomatoes, drained










  • 1.5 tsp chili powder










  • 1.5 tsp thyme










  • 1.5 tsp salt










  • .25 tsp cayenne pepper










  • 1 (15 oz) vegetarian refried beans










  • ⅓ cup salsa










  • 8 large corn tortillas










  • ½ cup oil for frying










  1. Brown meat with garlic and onion. Add spices. Stir in tomatoes and salsa. Stir in beans. Heat about 3 Tblsp. oil in fry pan. Place 1/2 c mixture in center of tortilla. Fold opposite edges over filling then roll up and secure with toothpick. Repeat.



  2. Fry each roll in hot oil until chimichangas are browned. Drain on paper towel. Serve hot.
