¾ cup fat-free egg substitute
6 complete matzo(s)
2 Tbsp light butter
Soften a piece of matzo with warm water, until it begins to bend; break into 2-inch pieces and place in a large bowl. Repeat with remaining matzo. Pour egg substitute over matzo pieces and mix until well-coated.
In a large nonstick pan, melt butter over medium heat. Add matzo mixture, cook, turning occasionally, until matzo just begins to brown and is heated throughout (approx 5 minutes).
Serve immediately. Makes about 1 cup per serving.
