Not chometz, But one of the best passover cakes. The trick to this cake is the baking soda and vinegar.
9x13 inch pan
1½ cup sugar
1 cup oil
2 tsp vanilla sugar
½ cup cocoa
1 pinch cofee
¾ cup potato starch
1 tsp baking soda
1 tsp vinegar
Cream the eggs, sugar, oil and vanilla sugar.
Add cocoa, coffee and potato starch.
In a bowl mix the baking soda and vinegar. It will bubble.
Add to the rest of cake. Place in a 9x13 inch pan.
Bake 350F for 40-50 minutes.
