This is my grandmothers recipe. Exactly how she's been making it for over 50 years, possibly longer ;). Use for egg rolls, potato blintzes or sliced up for the soup.

INGREDIENTS













  • 12 large eggs










  • 12 Tbsp potato starch










  • 1 cup cold water










  • - salt (about a tsp)










  1. In a blender or with a hand blender, mix the eggs. Add the potato starch, water and salt.



  2. Blend until smooth.



  3. Heat a crepe pan or skillet with a little oil. Spread a thin layer of batter on pan. when done, flip over and cook on other side. Repeat as needed.

Easy recipe and perfect consistency. It really can be used for everything-blintzes, eggrolls, and lukshen. It also freezes great. I just made 4 batches this morning and love the recipe. Thanks!
