INGREDIENTS













  • 1 Sweet Potato










  • 1 Eggplant










  • 1 Carrot










  • 1 Pepper (optional)










  • 3 Tbsp olive oil










  • - garlic powder










  1. Peel and slice vegetables into squares/cubes and/or rounds.



  2. Coat vegetables with olive oil. Spread vegetables onto a baking sheet in a single layer. Sprinkle garlic powder over vegetables.



  3. Roast in oven set to 400 degrees Farenheit for 30 - 35 minutes. Stir once, when the vegetables are cooked halfway through.
