INGREDIENTS













  • 2 whole chickens, cut into quarters (1½ lb each)










  • ½ tsp pepper










  • 1 cup dry red wine










  • 3 cloves garlic, crushed










  • 1 tsp dried thyme










  • 1 tsp dried basil










  • 1 tsp dried sage










  • ¼ cup honey










  1. Preheat oven to 400 degrees F.



  2. Place chicken in a large, deep roasting pan.



  3. Sprinkle with pepper.



  4. Combine remaining ingredients, stirring to dissolve honey



  5. Pour over chicken.



  6. Roast, basting frequently, until chicken is tender and browned, about 1 1/4-1 1/2 hours



  7.
