2 whole chickens, cut into quarters (1½ lb each)
½ tsp pepper
1 cup dry red wine
3 cloves garlic, crushed
1 tsp dried thyme
1 tsp dried basil
1 tsp dried sage
¼ cup honey
Preheat oven to 400 degrees F.
Place chicken in a large, deep roasting pan.
Sprinkle with pepper.
Combine remaining ingredients, stirring to dissolve honey
Pour over chicken.
Roast, basting frequently, until chicken is tender and browned, about 1 1/4-1 1/2 hours
