Soft and delicious supper! And the prep and cleanup couldn't be easier.
1 lb chicken cutlets, cut into thin strips
- flour, to coat
1 onion, thinly sliced
½ red pepper, sliced into strips
½ orange pepper, sliced into strips
6-8 fresh mushrooms, sliced
½ can baby corn
¾ cup light soy sauce
¾ cup brown sugar
Coat the chicken strips in the flour.
Layer them on the bottom of a 9x13 inch pan.
Cut the onion into thin rings and layer them on top. Place peppers on top. Layer on top the mushrooms and baby corn.
Mix the soy sauce (must be light soy sauce) and brown sugar. Pour on top.
Cover and bake at 350F 1 hour and 10 minutes. Uncover and bake 5-10 minutes.
