These brownies are quick and easy to prepare, and they are even quicker to disappear from your table. From "Mexican Kosher Cooking"
¾ cup margarine
2 cup sugar
3 eggs, beaten
1 tsp vanilla
1 Tbsp cinnamon
⅔ cup unsweetened cocoa
1 cup flour
1 cup coarsely chopped toasted almonds (option)
Preheat oven to 350F.
Combine the first four ingredients and mix thoroughly on high with an electric mixer. Add remaining ingredients and mix thoroughly again. The batter will be thick.
Spoon the batter into a baking dish and bake for 40-50 minutes. You can tell when brownies are done when they crack in the center and/or a toothpick inserted come out clean.
