INGREDIENTS

3 eggs

1 cup sugar

¾ cup oil

3 tsp vanilla

⅛ tsp almond extract (optional)

⅓ cup orange juice

3 tsp baking powder

5 cup flour (add up to ½ c more if needed)

1 apricot jelly for filling

1 egg

1 tsp cinnamon and sugar, optional

Beat eggs and sugar until creamy.

Add oil and beat.

Then add vanilla, almond extract and orange juice.

Next add baking powder.

Gradually add flour, a little at a time, until the dough's consistency is able to be rolled.

Put a little flour on board or counter to keep dough from sticking. Roll out a small amount of dough at a time, until it is about 1/4-inch thick.

Use the top of a glass to cut circles out of the dough.

Place spoonful of jelly in center of your circles, and pinch together to form hamentashen.

Brush hamentashen with egg. (Optional: add cinnamon and sugar to egg before brushing.)

Bake at 375℉ for 10 minutes or until golden brown.

hey, this is my recepy. i give it a five because this is how i make mine. although i add lemon juice instead of orange juice and skip the spices. it is crispy on outide and soft inside. ymm and yes i do put egg on top, it keeps it from opening up. enjoy and freilihen purim.
