Very yummy, moist, soft heavnly carrot muffins! You could even make them healthier by using apple sauce instead of oil and whole wheat flour in place of the white flour........... they are a hit for the whole family!!!!

INGREDIENTS













  • 5 Carrots










  • 1 cup Flour










  • ½ cup Dark Brown Sugar










  • ½ cup sugar










  • 1½ tsp Baking Powder










  • ½ cup Oil










  • 2 Eggs










  • 1 tsp Vanilla










  1. Shread the carrots with a hand grater



  2. mix everything together, pour into sprayed muffin tins and bake for 20 ish minutes



  3. for fun toppings you can use chocolate chips, or candied pecans...whatever you would like to make it look so pretty and taste even better
