With limited variety of ingredients in our family, this recipe is a Passover favorite when you need something simple and tasty. The aroma of the blend of vegetables gives the chicken an extra special taste.

INGREDIENTS













  • 1 pk chicken quarters or legs










  • 3 medium onions - sliced










  • 1 lg onion










  • 1 lg celery knob










  • 1 turnip










  • 3 carrots










  • 1 parsley root










  • ½ cup water










  • ¼ cup oil










  • 1 Tbsp salt










  • 1 Tbsp garlic & pepper (if you use)










  • 3 Tbsp potato starch










  1. Place sliced onions in 9x13 pan. wash chickens * place over onions, skin side up. Grate all vegetable in processor.



  2. Add water, oil & salt. Coat each chicken skin with a handful of grated veg blend. pat down nicely. Add 1 c water to pan. Bake covered on 400^ for 1 hr, then uncovered for 1/2 hr until top is deep brown & crispy.



  3. Add potato starch to extra liquid in pan to make a gravy. Pour over mashed potatoes.
