A great light and easy dairy soup. Perfect for after the fast or anytime.
1½ cup diced onions
2 garlic cloves, crushed
2 Tbsp flour
4 cup cauliflower florets
1 cup milk
4 cup water
4 Tbsp chicken soup mix
1 bay leaf
1 tsp thyme
- cayenne pepper
6 oz grated cheddar cheese
Saute the onions and garlic in butter. Add flour and stir until thick.
Add rest of ingredients except cheese and bring to a boil.
Lower flame and let simmer for 15 minutes.
Remove bay leaf and partially blend soup, leaving some whole florets.
Before serving, add cheese and mix until melted.
