These are full of flavor. Pound the chicken thinly and you’ll be rewarded with juicy meat that will keep you from counting down the days until the snow melts from around your outdoor grill.

INGREDIENTS

  • 1 lb chicken breast or dark chicken cutlets, thinly pounded

  • 1 tsp rosemary

  • 1 tsp oregano

  • 1 tsp ground cumin

  • 1 tsp paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • - BBQ WHITE SAUCE:

  • ¾ cup mayonnaise

  • 2 Tbsp vinegar

  • 1 clove garlic, crushed

  • ½ tsp pepper

  • ½ tsp spicy brown mustard

  • ½ tsp sugar

  • ½ tsp salt

  1. Combine the rosemary, oregano, cumin, paprika, salt and pepper. Mix with the olive oil and rub to coat chicken well. Let marinade 30 minutes (or up to 6 hours).

  2. Spray a grill pan with cooking spray. Preheat the grill pan over high heat for a full 5 minutes.

  3. Place chicken on pan. When most of the chicken is white, turn the chicken over and cook for an additional 1-2 minutes. Do not overcook.

  4. To prepare white sauce, combine all ingredients. Serve chicken with sauce.

One of my new favorites! Me and my hubby loved it! Didn't change a thing in the ingredients; only thing I changed was I did it in a frying pan with a tiny bit of oil, since I didn't have a grill pan. It came out soo good!

LOVE LOVE THE RECIPE!

I made this recipe twice for dinner and it was a big hit. Everyone- I mean everyone, all the picky eaters, wanted seconds. I followed the recipe and used all the ingredients; it has fabulous flavor. I also served the grilled chicken with a sweet and hot sauce for variation. I will be making this recipe for dinner, for sure! I used a regular inexpensive grill pan.

Very good in wraps.

Very good. I served in wraps with the sacue and veggies. I'm not sure if we would have liked them plain. I left out the rosemary because I didn't have. It was a great supper. I baked them in the oven at 500 degrees because I don't have a grill pan.
