I love these for a great on-the-go breakfast or snack. It's a fantastic way to use up the extra bananas that seem to always be around.

INGREDIENTS













  • 1 (4 oz) stick margarine










  • ¾ cup sugar










  • 1 egg










  • 1½ cup flour










  • 2 ripe bananas










  • 1 tsp baking powder










  • 1 tsp baking soda










  • 1 tsp hot water










  • 1 tsp vanilla extract










  • ½ tsp salt










  • ½ bag chocolate chips










  1. Mash the bananas. Mix with the baking soda and hot water. Set aside.



  2. Cream the margarine and sugar in the mixer. Add beaten egg and mix. Add extract, baking powder, flour, and salt. Mix well. Add the banana mixture and chocolate chips.



  3. Pour into cupcake holders and bake at 400F for 15 minutes.

very easy and light and fluffy. i used 3 bananas and oil and combined in 1 bowl and they came out great.

These come out looking just like the picture. crispy outside and delicious moist inside! I used an extra banana bc mine were on the smaller side and the more the merrier! delish. beware its a small recipe- only 12 muffins!

These are scrumptions banana muffins - I make them all the time. You can make them with oil to cut the margarine out and they are totally still delicious. I even sometimes put in half white whole wheat flour - and also with delicious results.

Very often it's the Shabbos morning treat for my kids!
