My mother used to make this for dinner quite often. It's an easy, cheap and healthy dinner. This is THE ONLY time I would ever touch beans.
1 cup rice
1 can vegetarian beans
1 can corn
1 taco kit
Cook rice according to package directions.
Add into rice the beans, corn, half of the taco seasoning packet (from the kit) and the full sauce packet. Mix well. Adjust seasoning to individual taste.
Melt cheese into the mixture.
Serve in taco shells or with tortilla chips.
Optional: dice up lettuce, tomatoes and cucumbers and serve it inside the taco as well.
