Make extra if you want any left for Yomtov!
2 Tbsp oil
2 cup flour
2 tsp baking powder
1 lb honey
⅔ cup sugar
1 tsp powdered ginger (optional)
Beat eggs and oil together.
Gradually add flour and baking powder.
Take handfuls of dough and roll to ½ in. diameter.
Cut into ½ in. slices.
In heavy pot combine 1 lb. honey and 2/3 c. sugar (1 tsp. ginger optional).
Boil on LOW flame.
Add dough a few pieces at a time so it keeps on boiling.
Stir to coat.
Cover and cook 20 minutes or until they begin to brown.
Uncover and cook another 5 minutes.
Cool and store in covered container.
May be made 3 days prior to use.
