Delicous and simple. Can be made with most vegetables. Can be eaten hot or cold. I often bring this to work with me for a quick and healthy meal.
1 Bag of cous cous
1 Red onion
1 Red pepper
1 Yellow pepper
1 Sweet potato
1 Head of garlic
4 Tbsp Balsamic Vinegar
Cook the cous cous according to the packet instructions. Use soup powder for additional flavour
Peel and cut up all the vegetables. Cut into big chunks. Spread on a roasting dish, add seasoning - salt and pepper. Drizzle olive oil over and mix well.
Put into a preheated oven on 225 degrees for approx 20 minutes or until the vegetables are well roasted.
When the vegetables are ready, remove from the oven and mix with the cous cous. Add balsamic vinegar to taste.
Serve and enjoy!
