
This was a trial-by-fire recipe, and I'm so pleased with how it came out. You could easily leave out the cinnamon and replace the baby food with any flavor for a delicious, flavorful sweet or savory bread!
I used egg beaters in place of eggs and would recommend doing sugar substitution, too. Just be sure to make sure your batter doesn't end up too wet!

INGREDIENTS
6 oz Cinnamon-Sweet Potato Baby Food (1 jar)
1 tsp vinegar
½ cup sugar
¼ cup oil
½ tsp vanilla extract
½ tsp ground cinnamon
2 eggs
¾ cup plus 2 Tbls cornstarch
1 tsp baking soda
¼ tsp xanthum gum
½ tsp salt
Preheat the oven to 350 degrees Fahrenheit and grease a 9" x 4" loaf pan.
In a large bowl, combine all of the ingredients, mixing well to get rid of clumps. Never fear, the battle will be thin!
Pour the ingredients into the prepared pan and bake for 40-45 minutes.
