INGREDIENTS













  • 2 cans corn or 3 cups frozen corn










  • 1 tsp salt










  • 1 tsp sugar










  • 2 eggs










  • ¼ cup flour










  • 1-2 chopped scallions










  • ½ red pepper, diced










  1. Puree 1 cup of the corn with salt and sugar.



  2. Beat eggs and add pureed corn with the remaining ingredients.



  3. Heat oil in a frying pan. Fry until lightly browned.
    You can also bake it at 450 for 6-8 minutes on each side.
