These are fun and a great alternative to potato latkes.
2 cans corn or 3 cups frozen corn
1 tsp salt
1 tsp sugar
¼ cup flour
1-2 chopped scallions
½ red pepper, diced
Puree 1 cup of the corn with salt and sugar.
Beat eggs and add pureed corn with the remaining ingredients.
Heat oil in a frying pan. Fry until lightly browned.
You can also bake it at 450 for 6-8 minutes on each side.
