This is a nice potato salad when you want a bit of a change. I make it often for Friday night dinner.

INGREDIENTS













  • 4 large potatoes










  • ¼ cup mayonnaise (I use Hellman's)










  • 2 Tbsp balsamic vinegar










  • ½ red onion, diced finely










  • 3 scallions, chopped finely










  • - dash of black pepper










  1. First make dressing. Mix all the ingredients but the potatoes and scallions in a small bowl and chill.



  2. Chop up potatoes into med. size chunks. Boil in salted water until just tender. Drain very well, and let them cool off a bit.



  3. When ready add the dressing to the potatoes and stir, and then add in the scallions.
