These one bowl cookies are great and you won't miss the margarine at all.
¾ cup sugar
¾ cup dark brown sugar, packed
⅞ cup vegetable oil
1 Tbsp vanilla
2½ cup flour
¾ tsp baking soda
¾ tsp baking powder
⅛ tsp salt
1½ cup chocolate chips
Preheat oven to 375 F
Using an electric mixer, beat the eggs and sugars together until light and fluffy.
Add the oil and vanilla and mix in thoroughly.
Add the flour, baking soda, baking powder and salt and mix at low speed.
Fold in the chocolate chips by hand.
Drop the dough by heaping teaspoonfuls 1 inch apart onto cookie sheets lined with foil.
Bake one tray at a time for 8 - 10 minutes. Cookies will firm as they cool. Do NOT overbake.
