INGREDIENTS













  • 3 potatoes










  • 1 egg, hard boiled, grated on teardrop holes of box grater










  • 2 scallions, white part only, sliced thinly










  • 3 Tbsp mayonnaise










  • 3 Tbsp vegetable or canola oil










  • 3 tsp spicy mustard










  • 3 tsp lemon juice










  1. Boil scrubbed potatoes in their jackets till done- a knife will easily slip in. Could take around 20 minutes or so depending on size of potatoes. Run cold water over the cooked jacketed potatoes to make for easy peeling. Peel and slice potatoes.




  2. Make dressing: combine mayo, oil, lemon juice, salt and black pepper- with a small whisk till entirely amalgamated.




  3. Gently combine sliced potatoes, scallions and grated egg in a large bowl. Thoroughly fold in dressing till everything is coated. Taste and adjust seasonings as necessary. You may have to add more mustard, lemon juice etc.. to reach the flavor you like.
