INGREDIENTS

8-10 potatoes, cubed

½ cup mayo

½ cup dijon mustard

2 Tbsp seasoned salt

¼ cup oil

( salt, to taste

Peel and cube potatoes.

Mix together the mayo, mustard and regular salt.

Coat the potatoes completely in mixture.

Pour the oil on the bottom of a 9X13 pan. Put the potatoes in the pan on top of oil. Sprinkle the seasoned salt on top of potatoes.

Bake at 400* until golden brown (about an hour an 20 min), mixing every 20 min.

Serve hot.

NOTE: If you can get your hands on a dijon mustard that contains horseradish, use it for best results. YUM!

This is delicious! I would definitely use less oil, mayo and mustard though.

I tried this recipe out one night for supper. They were good, very mustardy though. Maybe I would cut back on some of the mustard next time. But it's definitly an alternative to the classical bakd potato for every night supper.

Makes a nice change from the normal roasted potatoes. A good recipe for those who like mustard! I did find that the 1/4 cup oil was a little exaggerated,especially when uve got all that mayo in the recipe!?!

in my house we serve potatoes every single night without fail! this dish is a different kind of potato side dish but the blend of the mustard and potatoes baked together is scrumptious!
