A quick, easy and very delicious soup. Great for day to day or for special occasions. I like to serve this soup with mini, mini kneidlech. Freezes very well.
4 zucchini unpeeled
- salt and pepper to taste
- optional- garlic
Wash and cut unpeeled zucchini in cubes. Peel potatoes and cut into chunks. Peel onion and quarter it.
Place all in pot, cover with water and cook until vegetables are soft. Add spices and cook for a few more minutes.
With an immersion blender, blend in pot all ingredients until smooth. If you like the soup chunkier, just don't blend it that smoothly. Prepare the kneidlech and form into tiny sizes. Drop into soup to cook.
