Easy and delicious. The pie will rise slightly on top of the apricot halves and people will ask you how you got them inside. You can even send it as a gift and wrap it tastefully.
1 cup flour
1 cup sugar
1 (4 oz) stick margarine
½ tsp baking powder
1 tsp vanilla sugar
1 (15 oz) apricot halves in heavy syrup, drained
- apricot jam
Mix the first 6 ingredients by hand or with a mixer.
Pat the apricot halves dry.
Put dough in a 9" round/square pan and place dried apricot halves on top (open side down) in any formation you like.
Bake @ 350F for 50 minutes and spread apricot jam on top while hot. (the jam sort of melts on the pie and gives it a nice shine)
