I think a big chefs salad is a hit for the diet nutrition crowd. I just dump Lettuce, Tomatoes, Cucumbers, Carrots, Scallions... and some Salmon I have left over from shabbos. Throw in some croutons and it is quite a meal.

I've added a really delicious apple cherry cobbler to my shabbos menu (it can also be served as a dessert with a scoop of parve vanilla ice cream). SO DELICIOUS!

You cut up 6 apples and place them on the bottom of a pyrex or foil pan.
Take a can of cherry pie filling and cover the apples with it.

Then mix:
1 cup quick oats
1/4 cup flour
1 stick margarine
3/4 cup brown sugar and pat on top of cherry pie filling

Bake in the oven at 350 for 45 min- 1hr.
Serve warm
HEAVEN!!!!!

More ideas:

Whole wheat cheese toasts (you can do it in a sandwich maker with whole wheat bread, cheese, ketchup. For fun, you can lay out a few optional ingredients (like sliced inions, tomatoes, olives, etc) and let whoever you are making it for choose what they want.

You can also try making a large soup and freezing small portions and just quickly defrost for lunch....

Eggs are always easy and good, I like to toast bread and make sunny side up eggs and eat it together.

You can also always copy any salad you like in restaurants and make at home (greek, ceasar, nicoise) and prepare the dressing beforehand. Eat in with a hard boiled egg and a scoop of tuna.....

Baked potato and cheese with broccoli - easy and yummy.
Fast version: Bake a potato for 6 minutes in the microwave.
Top with cheese and ( either frozen or fresh) broccoli and place in toaster oven for a few minutes until it reaches your desired level of toastiness (this is a made up word).

(I am at the level of laziness where I just melt the cheese in the microwave and forget the broccoli, but it's really much tastier the other way.)

* Works with sweet potato too if you are into more healthful options...

I have never tasted the fries so I can't help you with trying to duplicate it, however I did call them up and try to get an answer from them. The owner laughed and told me that he can not share his secret. :(
Maybe someone else has eaten there and has an idea how its made or someone knows the owner and can get you an answer?

What about Falafel? You can buy fresh pita, make an Israeli Salad and serve it with some chummus and techina.

I once ate in Pizzazza in London and they had the most delicious "Chili Fries." They were french fries battered in sweet chili. I tried duplicating it but always ended up with soggy fries. Their fries were still crispy. How do they apply the batter?

Ok, cheating is sometimes allowed.
As much as we would like members to enter recipes correctly and properly (please do not put in 1 bag of lettuce- a bag is 12 oz). There are cases where it's allowed.

To add a subtitle to your recipe, like Dressing or Glaze, you can put a hyphen in the quantity box. Press the recipe numbers to see an example: Recipe #362 or Recipe #364
