I need some good and easy supper side dishes.
Currently, I've been doing a lot of grilled veggies and garlic green beans. I need something new and exciting. And I'm a working woman, so it's gotta be relatively simple and quick.

If your family goes for squash you can just make sauted squash and onion. It's the easiest. You just saute a onion in oil and add as many squash and some oil and let cook cook cook on a medium-low flame. add salt & pepper to taste.

Is sweet potatoes a vegetable? :):)
Other ideas:
Salad, Salads.... you get the idea.
And I make quick cauliflower fries. Place frozen cauliflower on a pan. Sprinkle liberally with spices (salt, chili powder, paprika, garlic powder..) Spray Pam on top. Bake on 425 until its ready. Its not exactly fries, but I like to imagine it is.
Even cauliflower haters like this.

You can try spinach- creamed, or with other veggies..Or raw veggies with a ketchup mayo dip next to it...you can do chinese style stirfrys, using whatever you have in the fridge , and a can of chinese stir fry or frozen stirfry veggies, just add whichever sauce u prefer, soy, spices, ..bruschetta style salad is also good, with or without the bread.

Try corgett chips you cut it into chip sizes season with salt a pepper and bake for 10 min or more checking on it all the time it should look crusty when ready

Yep - you're right!!

Courgette = Squash... thats how we call it in England! Im beginning to become an expert at the different terms and words used for the same stuff at different parts of the world! Thanks to my American husband!

I got to try this one out. I hope my husband likes it. It is a good way for me to get rid of the frozen cauliflower I got in the freezer.

This is a super easy side dish that tends to vanish before it gets to the table! place frozen sugar snap peas (or fresh but then they need to be washed etc.and super easy is key here) in a 9x13 pan. Toss with a little oil and salt. Bake at 350 for 20 minutes. Remove from oven and sprinkle with sesame seeds.

French style green beans cook low flame add corn flake crumbs which was roasted before with sugar and a little oil mix for 3 minutes or when hot serve.

Here's a great side dish that takes no time to prepare. Place in oven and when ready-enjoy. Delicious and no mess, my kind of recipe. Place 1 uncooked regular rice in pan. Pour 4 cups boiling water on top. Add 1/2 stick(2 oz) margarine. Put a pack of onion soup mix- or 4-5 tbls on top of this. No need to mix anything together. Just cover tightly with aluminum foil. Bake for 1 hour. To jazz it up, just add any vegetable when baking.

Here's a yummy one that doesn't usally last until the next day in my house!

Boil carrots until soft and then mash with extra virgin olive oil, Fresh minced garlic, Fresh parsley, basil, or cilantro, chopped, maybe some parmesan cheese if you have some on hand, and enough salt and pepper to taste. Serve hot and enjoy!
