I'm looking for quick, easy, & nutritious lunches. Any ideas?

What about Falafel? You can buy fresh pita, make an Israeli Salad and serve it with some chummus and techina.

Baked potato and cheese with broccoli - easy and yummy.
Fast version: Bake a potato for 6 minutes in the microwave.
Top with cheese and ( either frozen or fresh) broccoli and place in toaster oven for a few minutes until it reaches your desired level of toastiness (this is a made up word).

(I am at the level of laziness where I just melt the cheese in the microwave and forget the broccoli, but it's really much tastier the other way.)

* Works with sweet potato too if you are into more healthful options...

More ideas:

Whole wheat cheese toasts (you can do it in a sandwich maker with whole wheat bread, cheese, ketchup. For fun, you can lay out a few optional ingredients (like sliced inions, tomatoes, olives, etc) and let whoever you are making it for choose what they want.

You can also try making a large soup and freezing small portions and just quickly defrost for lunch....

Eggs are always easy and good, I like to toast bread and make sunny side up eggs and eat it together.

You can also always copy any salad you like in restaurants and make at home (greek, ceasar, nicoise) and prepare the dressing beforehand. Eat in with a hard boiled egg and a scoop of tuna.....

I think a big chefs salad is a hit for the diet nutrition crowd. I just dump Lettuce, Tomatoes, Cucumbers, Carrots, Scallions... and some Salmon I have left over from shabbos. Throw in some croutons and it is quite a meal.

A good Omelet is also great. I beat a couple of eggs with milk, salt and some pepper. I fry some onions and then add the eggs and throw in some cheese and cut tomatoes. I cover the pan so that it cooks on both sides and then flip it towards the end.

To me nothing beats a container of plain or vanilla yogurt sprinkled with granola and topped with blueberries. Very dietetic,easy and nutritious. I am usually very lazy to prepare for myself anything cooked. For the children, they prefer the swiss- strawberry yogurt, add some fruit and crackers and they are good to go.

Try making brushetta for a filling lunch. Dice onions and garlic and saute in butter or oil. Add diced tomatoes and spices; italian seasoning, basil, oregano, slat, and pepper. Let cook for a few minutes until tomatoes turn soft. Add cheese and cook until melted. Toast bread and top with warm brushetta. Enjoy!!

Pasta ia another good option. It is quick and you can add toppings. Sprinkle some grated cheese with tomato or pasta sauce, microwave for a few minutes- it tastes great. I love it with some steamed veggies or it is great with cut up fresh vegetables with a mayo sauce and spices. If you want it really nutritious just use whole wheat pasta.

Fake Seafood Salad -- quick and easy

Pour boiling water over fake seafood and some frozen peas. Wait a minute or 2 and drain off the water. Finely chop in a little onion. Mix with mayo and a little lime juice or TrueLime. This is fine on a low-carb diet. To make it even better (diet-wise) serve on a bed of shredded lettuce or other greens.
