We used to eat stir-fry made from canned chestnuts, bamboo shoots, baby corn, onions, baby carrots, and sometimes red peppers bell and fresh broccoli if I remember correctly. Maybe you could try adding some sugar or honey to the pan in the last few minutes of cooking the chestnuts to help with the carmelization. And for a side dish, what if you added them to mashed potatoes? OOOH, I just had an idea. Try carmelizing them with some onions and garlic and serve with an egg or two on toast with the yolks ooozing all over! I all of a sudden feel very inspired. |
