Now in the winter chestnuts are really delicious. I am looking for recipes that have chestnuts in them. I once ate chicken with chestnut stuffing which was really tasty. Today you can buy ready bags of chestnuts so it is really easy. I am interested in food rather than cakes. Thanks

Hello,
I am new to this blog, so I am not sure if this reply will end up in the right place. But I will try anyway. When I was growing up, my mom used to add chestnuts to stews (any and all), peeled of course, just throw them in when the meat is about halfway done. I sometimes throw a handfull into cholent, or into any grain pilaf, when the grain is almost done.

Thanks. I will try using them like you suggested in my meat and rice dishes. I'll let you know how it came out. Still looking for ways to caramelize them or as a side dish. Anyone out there who has recipes?

We used to eat stir-fry made from canned chestnuts, bamboo shoots, baby corn, onions, baby carrots, and sometimes red peppers bell and fresh broccoli if I remember correctly. Maybe you could try adding some sugar or honey to the pan in the last few minutes of cooking the chestnuts to help with the carmelization. And for a side dish, what if you added them to mashed potatoes? OOOH, I just had an idea. Try carmelizing them with some onions and garlic and serve with an egg or two on toast with the yolks ooozing all over! I all of a sudden feel very inspired.

Thanks, I caramelized them like you suggested with onions and garlic and I served them alongside a chicken dish. It was delicious. I will also try them in a stir-fry. Great idea! Thanks for the help
